I made this recipe for Mexican Black Bean Salad a few months ago for our church dinner. It was a HUGE hit!
The night before, I cooked the quinoa & pre-chopped all the ingredients except for the beau monde seasoning b/c I couldn't find it in the store (I just added a wee bit more cumin & a dash of cayenne). In the morning, all I had to do was throw it together, though I didn't add the tomatoes. To serve, I added the tomatoes, stirred & set it out with tortilla chips.
Yummy, quick & healthy!
