This is a quick meal that is easily frozen for later or thrown into the crockpot. Here are some notes for how we adapt this recipe:
- use olive oil vs canola oil
- make sure you FINELY chop the veggies (that's for my picky eaters!)
- we think this recipe feeds way more than 4 people- easily feeds our crowd of 2 adults w/ 6 littles & we usually have leftovers (we do serve it with sides, usually salad, which might be why we do not eat as many joes)
