Recipe: Jam Bars

I'd forgotten about this recipe until I cam across it yesterday. It's very healthy, though I'd like to think through how to soak the grains. The children LOVED it but Eric wasn't a fan due to the coconut (he's weird like that). It makes a great snack as well as a dessert, though it is a bit crumbly & messy. Enjoy! Please note that I've adapted this recipe from one I found in the book "Recipes from the Old Mill." (It's been so long since I read that book from the library that I can't remember one thing about it, so I'm not sure if it is a good read.)

Jam Bars


Combine the following ingredients together & press into the bottom of a greased 9 x 13" pan:

1 egg
1/2 C. softened butter
1 tsp. baking powder
1 Cup soft whole wheat flour
1-1/4 Cup rolled oats
1/8 Cup sugar

Spread 1 Cup (I usually do not measure) of jam over top. (I only buy organic unsweetened jam from Trader Joes- we never miss the sugar!)

Combine the following ingredients & sprinkle over the jam:

1 Tbs. sugar
1 beaten egg
2 Tbs. softened butter
1 Cup unsweetened shredded coconut

Sprinkle with silvered almonds and/or raw sunflower seeds.

Bake at 350 for 30-45 minutes or until the topping begins to brown slightly.

Oh, YES! A full sized oven that bakes at an even temp. Bliss! :)

We'll see if we can adapt this to be gluten free. Looks like a tasty treat!

I bet coconut or almond flour (yum!) would work fine & then just use gluten-free oats.
