Menu Plan: Week of November 7, 2011

For quiet some time, I've been grocery shopping every two weeks thanks to a great farmer's market where I can buy cheap food (mostly organic) that stays fresh. Yeah! It's a lot of food to plan & shop for but then I'm done for TWO weeks- yahoo! My menu plan was a list of breakfasts, lunches, snacks & dinners- I would decide the night before or morning of what to make. But with a nursing baby in the house (and a fuzzier brain), I've decided that I need to more detailed in my menu planning. I'll still keep up going grocery shopping every two weeks- this Friday will be my first big trip after having Emily.

So, here is the list for this week. You'll notice most of our dinners are meals from various families from our church. What a blessing!!! Thank you, thank you! I have a lot of snacks, beans & breads premade & stored in the freezer. This is our third week using these foods (many that I made with a friend) and it has been such a blessing as I recover. I'm going to need to replenish my freezer starting next week. Jill, wanna come over? :)

Monday, November 7
Irish Oatmeal w/ Cinnamon Rolls (thank you, Uptons!)
Veggie Pockets, fresh fruit & veggies w/ nuts
Jambalaya w/ rice (thank you, Uptons!)
Snack: Blueberry Muffins
PREP: soak breakfast / defrost refried beans & dinner / make tortillas

Tuesday, November 8
Dutch Puff w/ (frozen) peaches
Cheese & Bean Tortillas, fresh veggies
Lasagna (thank you, Thomas'!) w/ salad
PREP: defrost black beans & dinner / make dinner rolls

Wednesday, November 9
Eggs w/ Apple Pockets
Mexican Black Bean Salad w/ tortilla chips & fruit
Dinner from Hawkins (thank you!) w/ dinner rolls
Snack: Pumpkin Chocolate Chip Muffins
PREP: soak breakfast / defrost chicken stock & dinner

Thursday, November 10 MEAL PLANNING DAY!
Baked Oatmeal w/ (frozen) blueberries
CP Lentil Stew w/ veggies
Beef Stew (thank you, Casins!) w/ salad
PREP: defrost bread / make deviled eggs

Friday, November 11 GROCERY SHOPPING DAY!
Yogurt & Granola
PB Sandwiches, fresh veggies & deviled eggs
Pizza w/ popcorn
Snack: Blueberry Muffins
