Recipe: Chocolate Mint Brownies

Originally, this recipe come from our good friends, the McDaniels, but I've made some adaptions. I made these brownies for yesterday's fellowship meal at the church we have been attending and it was a huge hit. In fact, I've been told I have to bring it next time! :) Plus, Matthias asked for this instead of a cake for his birthday! So, enjoy!

Chocolate Mint Brownies

Make 9x13-inch pan of brownies. (Box or from scratch- whatever you are up to!) Cool completely.

Mint Layer:

1/2 Cup Butter, softened
2 Cups Powdered Sugar
Pure Peppermint Extract
Milk
Green Food Coloring (totally optional!)

Combine the above ingredients together until smooth enough to spread. (Be careful not to add too much milk!) Spread over cooled brownies and chill completely. Be sure to add a lot of peppermint so that the taste stands out- I added 5 teaspoons (!) & thought at first the taste was too strong. But, after the brownies were all finished, it was just right.

Chocolate Layer:

6 Tbs Butter, softened
1 Cup Chocolate Chips

Melt butter & chocolate together until smooth and then layer over the mint. Cool completely before serving.

Eric says I should say a church in the area that is HUGE and so not us (women music leaders, coffee shops, etc)... it would be funny to see who would comment. ;)
